Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- pepper and salt
- 4 -8 ounces halibut fillets

- 1/2 cup cornstarch, approximately (for dredging)
Directions
- Heat deep fryer to 365 F.

- Add ginger beer to dry mixture and stir enough until combined. If batter is over mixed, it will be tough.
- In the cornstarch dredge halibut then dip in the batter.
- Allow any excess batter to drain away, then slowly, and carefully, dip the fish into the hot oil.
- Fish can be fried until golden and crispy and is cooked through, approximately 8 to 10 minutes. Note, the oil temperature will drop a little, the ideal is 365 degrees.
