Potato Bacon Casserole
This potato and bacon casserole is delicious served with sour cream and a ceasar salad.

Ingredients
- 10 medium potatoes (any variety)
- Olive oil (for drizzling)
- Salt and pepper - to season
- 1 package bacon
- (Serves 6-8)
Directions
Potatoes
- Peheat your oven to 400 degrees F.
- Line your baking trays with parchment paper and drizzle with olive oil.
- Begin by peeling the potatoes. Wash and dry them and if there are any dark spots, cut them off.
- Use a sharp knife to slice the potatoes into very thin circles.
- Begin placing your potato rounds onto the baking sheet, into as many layers as needed.
- Place the potatoes into the oven and bake 15 minutes to begin with while you prepare the bacon.
Bacon
- Remove packaging and cut into tiny bits.
- In a large skillet, cook the bacon until crisp.
- Use a slotted spoon to remove the bacon onto a plate lined with paper towels. The paper towels will absorb any excess fat.
- Open the oven and mix the bacon bits gently into potatoes.
- Cook for another 15-20 minutes until potatoes are tender and crunchy on top.
- Season with salt and pepper.
